Ingredients
You will need just a few simple ingredients for this summer salad recipe:
- 3 Cups CUBED WATERMELON
- 1 1/2 Cups SLICED STRAWBERRIES
- 1/2 Cup BLUEBERRIES
- 1/2 Cup CHOPPED RHUBARB
- 1/2 Cup DICED CUCUMBER
- 3/4 Cup FETA CHEESE CRUMBLES
- 2 Tablespoons Fresh CHOPPED FRESH MINT
- 1 Tablespoon Fresh CHOPPED FRESH PARSLEY
For the Dressing:
- 1 Tablespoon Olive Oil
- 2 Tablespoons Fresh LIME JUICE
Instructions
FIRST, add 3 cups cubed watermelon to a large bowl.
THEN, add in 1 1/2 Cups sliced strawberries, 1/2 cup blueberries, 1/2 chopped rhubarb, 1/2 cup diced cucumber, 3/4 cup Feta cheese crumbles, 2 Tablespoons mint and 1 Tablespoon chopped parsley.
NEXT, in a small bowl, whisk together 1 Tablespoon Olive Oil with 2 Tablespoons fresh lime juice.
