Ingredients Needed
For this amazing OMAD intermittent fasting recipe you will need:
- 2-3 Cups Shredded Rotisserie Chicken Pieces
- 2 Cups Low Sodium Chicken Broth
- 1 Can Chickpeas (Drained)
- 1/2 Cup Cherry Tomatoes (Halved)
- Juice from One Whole Lemon
- Oregano and Paprika (1 teaspoon each)
- 1 Container Crumbled Feta Cheese (I use the Tomato & Basil)
- 2 Cups Baby Spinach (Shredded)
- 1 Bag Frozen Cauliflower Rice (I use the Microwavable Bag kind)
How to Make
This recipe is so darn easy to make. Simply grab a big pot or skillet, heat to medium and literally dump everything in except the frozen cauliflower rice bag.
While everything is heating up, microwave the cauliflower rice (usually takes 5-6 minutes). Then add the cauliflower rice and VOILA!
The cauliflower rice will make this recipe pretty watery so when you serve it I recommend using a slotted spoon. We eat ours in a bowl. YUM!
