I make this SUPER LOW-CARB side dish 1-2 times every week to enjoy alongside our GREEN CHEF family dinner! I love to mix it up & use different varieties of cheeses (shredded gouda or asiago) and cream cheese (chive & onion or garlic & herb) & sometimes I get really crazy & use the Kerrygold garlic and herb butter instead of the regular! YUM CITY!
*This is the recipe that I probably make THE MOST! It has completely replaced my love and addiction to rice & risotto! Honestly, I love it so much that I haven’t even wanted rice for well over a year now! The best part is that it is super QUICK and EASY to make. If you have ever made actual risotto from scratch you know how extremely labor intensive it is – like 30 -40 minutes of constant stirring, and, I kid you not, this stuff tastes JUST LIKE CREAMY RISOTTO that you would get in a fancy restaurant! It’s seriously AMAZING!
