Ingredients
For this recipe, you only need a few simple and healthy ingredients including:
- 4 Roma Tomatoes
- 4 Beefsteak Tomatoes
- 3-4 Garlic Cloves
- Italian Seasoning
- Olive Oil
- Fresh Basil Pieces, a few Rosemary Sprigs and some Chopped Green Onion Pieces (Optional Ingredients – but highly recommend)
Directions
FIRST, preheat oven to 400 degrees and then halve all tomatoes.
THEN, place tomatoes (cut side up) on a baking sheet lined with aluminum foil.
NEXT, drizzle tomatoes with olive oil and Italian seasoning. Place garlic cloves in between tomatoes.
I also like to add a few pieces of fresh basil and some rosemary sprigs. Sometimes I add a little green onion too.
FINALLY, roast tomatoes in the oven for 60 minutes.
Scrape roasted tomatoes, spices and garlic into a food processor (I just use my Ninja Blender), blend until smooth and ENJOY!
