WHY SHOULD YOU EAT PICKLES?
OKAY – So WHY SHOULD YOU EAT PICKLES??? Here are all of the “DILL”-Lightful REASONS!
- They are FANTASTIC for breaking your fast because of the salt/electrolytes. They are also only about 5 calories per pickle. IMPORTANT NOTE: The pickles that you buy in the store are often packed with tons of sugar and other crap so it is a good idea to make your own so you know exactly what is going in that jar!
- Pickles can help to CONTROL BLOOD SUGAR LEVELS (very important for health & weight loss)!
- Pickles are RICH IN PROBIOTICS which are very important for GUT HEALTH! They help to boost friendly bacteria in the gut to treat problems like diarrhea, irritable bowel syndrome and constipation (SORRY – TMI – just trying to help).
- When you eat pickles alongside other foods/meals, it helps your body to absorb more nutrients.
- Pickles and pickle juice can also help with HEARTBURN.
- Helps to relieve and fight muscle cramps and spasms.
- Pickles are great for relieving menstrual cramps for women who suffer with heavy periods or PMS. (Sorry – more TMI! Lol)

- Pickle juice can really help to relieve BLOATING!

15. Drinking 1-2 oz. of pickle juice GETS RID OF HICCUPS! It TOTALLY WORKS! Sometimes I get hiccups in the middle of the night (so annoying) and I can’t get rid of them! Luckily, I make my homemade pickles so often that I usually have a jar prepared in my fridge. I creep out of bed and take a giant gulp of my pickle juice and I kid you not – every time so far it has cured my hiccups! It works like a charm – even though I am technically breaking my fast in the middle of the night – oh well, you can’t win them all!

This Low-Carb snack recipe is so perfectly satisfying.
I often use “EVERYTHING BAGEL SEASONING” as my spice mix-in.
In an effort to up my protein, I started adding a small slice of turkey and a square of cheese to my cute little cucumber snack.
Fortunately, there are so many “cool” ways to dress this snack recipe up!

DREAMY CREAMY CAULIFLOWER RISOTTO

I make this SUPER LOW-CARB side dish 1-2 times every week to enjoy alongside our GREEN CHEF family dinner!
I love to mix it up and use different varieties of cheeses (shredded Gouda or Asiago) and cream cheese (chive & onion or garlic & herb).
And, sometimes I get really crazy and use the Kerrygold Garlic and Herb butter instead of the regular! YUM CITY!
This is the healthy side dish recipe that I probably make THE MOST!
It has completely replaced my love and addiction to rice and risotto!
Honestly, I love it so much that I haven’t even wanted rice for over four years now!
The best part is that it is super QUICK and EASY to make. If you have ever made actual risotto from scratch you know how extremely labor intensive it is – like 30-40 minutes of constant stirring.
And, I kid you not, this stuff tastes JUST LIKE CREAMY RISOTTO that you would get in a fancy restaurant!
JEN’S HOMEMADE CHICKEN NOODLE-LESS SOUP

This soup is so delicious you won’t even miss the noodles, or the carbs for that matter!
TIP: No matter what you do – DO NOT FORGET THE BUTTERNUT SQUASH CHUNKS! I promise you they totally take this recipe from a 10 to a 10+++ on the yumminess scale!
When I started my health journey in 2021, I knew that I needed to greatly reduce the amount of super carby, highly processed foods like pasta in my diet.
I must tell you that I WAS NOT HAPPY about this one bit because I LOVE PASTA!
The pasta that I missed the most was my mom’s homemade Chicken Noodle Soup.
She always made it for me when I was a kid. I can still taste those delicious wide egg noodles.
As I began experimenting more and more in the kitchen with substitutions, I somehow merged 3-4 recipes together and a few extras of my own and eventually came up with this AMAZING low-carb, low-calorie (not that I count calories, lol), super healthy, and satisfying soup recipe.
About 2 months into my “IF” weight loss journey I started making this soup about once a week.
I would often eat it first with my dinner many nights. It quickly filled me up and made me feel so completely satisfied.
I have to believe that this soup (along with a few others that I have made in the last several months) has truly helped both with my weight loss and health.
Sometimes I add a secret ingredient to this recipe (not mentioned above).
I often like to add Homemade Chicken Bone Broth-complete with collagen, good for added protein, digestion, gut health and more.

This is a super quick, simple, and delicious Low-Sugar/Low-Carb dessert option!
I like to use the TWO GOOD brand of yogurt because it only has 2 grams of sugar.
My favorite is the coconut flavor, however, feel free to use any flavor of the TWO GOOD greek yogurt.
This concoction is definitely one of my favorite GO-TOs when I want a healthy Tummy Yummy dessert!
